Carol's Beans

"Southwest Baked Beans"

 8 servings

 

1 tablespoon vegetable oil

5 ounces Canadian bacon, cut into

  1/2-inch pieces

2 cups chopped onions

2 8-ounce cans tomato sauce

1 cup (packed) golden brown sugar

6 tablespoons apple cider vinegar

3 tablespoons mild-flavored (light) molasses

1 tablespoon Worcesterchire sauce

1 tablespoon chili powder

1/2 teaspoon hot pepper sauce

1 15- to 16-ounce can garbanzo beans

   (chickpeas), rinsed, drained

1 15- to 16-ounce can kidney beans

  rinsed, drained

1 15- to 16-ounce can black beans

  rinsed, drained

1 15- to 16-ounce can butter beans

  rinsed, drained

 

Preheat oven to 375F. Heat oil in heavy large

ovenproof pot over medium-high heat. Add bacon

and onions; saute until brown, about 10 minutes.

Mix in tomato sauce and next 6 ingredients. Add

all beans. Cover pot; transfer to oven and bake

until mixture thickens, stirring occasionally,

about 1 hour 35 minutes.
